Part used: Seeds (1 – 2 mm diameter), dark brown. The leaves and stems are also edible. Plant family: Brassicaceae (cabbage family).
Brown mustard is a larger plant than white mustard, reaching 1 m in height. Its leaves are broad and rounded at the base, tapering towards the tip. The flowers are smaller and so are the fruit pods (3-5 cm long). The pods are smooth and convex, containing up to a dozen seeds. Mustard pods should be harvested before they burst, that is, when they are almost fully developed but not ripe.
Mustard seeds have no flavor; their taste is sharp.
