Soybean (Glycine max) is a plant of the leguminous family, the Faboideae subfamily. It is a valuable crop as its composition combines a very high amount of protein an average of 40% and of oil 20%. Soybean proteins are rich in essential amino acids. In addition, soybean contains vitamin B complex, beta-carotene and is rich in mineral substances, especially calcium, iron and potassium. Cakes (byproduct from oil extraction) are used as a high quality animal feed product. Soybean meal and silos have a high nutritional value.
